I went to a friend's dinner party a few weeks ago and had the most amazing Jamaican food. Feeling inspired, I found a recipe on BBC Good Food and made a Jamaican Chicken Curry tonight and it was a big hit with DH and DCs (both teens).

I feel I need to explore and make more Caribbean food. Does anyone have any recipe suggestions or recipe book suggestions?

I'd say I'm an average cook. Constantly trying new things - some are a huge success like tonight. Others less so. Also often pushed for time. I do all the cooking and am bored of our current rotation of meals so any suggestions much appreciated. I do cook Indian, Chinese, Thai, Japanese meals (sometimes badly) but am clueless where to start with Caribbean food.

I adapt a veggie version of the jerk chicken (I use no extra salt, bit less soy sauce and half the vinegar, just one chilli and more of the sweet spices and lime to use it as a sauce n the oven instead of marinade), it's utterly delicious... the rice and peas is excellent too... enjoy!

@Fatherfintanstack, what do you use in place of chicken? I've got some Quorn fillets in the freezer which need using up. Do you think those would work well in this recipe?

Quorn would work, but I love it with halloumi and red peppers, slice the halloumi quite thickly. Delish

Thanks. I have a halloumi refuser (Hmm) but that would work for me with leftover marinade.

I love Carribbean cooking so much! I'm not sure if you are a fan of social media generally but if you use Instagram check out therainaskitchen, terriannskitchen, tishwonders, and especially RG vegan food. All incredible.
