Bought some oatmeal to make parkin and have most of the bag left, I know oatmeal is cooked differently to porridge oats so am wondering how to make porridge with medium oatmeal so that the rest of the bag doesn't go to waste

Also is it possible to do overnight oats with oatmeal, I've done it with porridge oats before. I have some frozen berries that need using which would be ideal for a compote which I coyld eat with the oats(much more healthy than I've been eating recently)!

I found a method to make overnight oats on this forum - put in a saucepan with a ratio 4:1 water to oats, bring to the boil, stir a few times, then put the lid on and turn the heat off and leave overnight. It just needs heating through in the morning. I make a big batch and keep it in the fridge until it's all used up

Soak the oatmeal in water or milk or a mixture overnight then cook like porridge in the morning. It takes a little bit longer, as you don't want any grittiness, but the porridge is much creamier!
