Sorry, this probably seems like a really basic question! But if I make this recipe the day before would I do the whole thing and then just reheat or just make it up and not cook it for 20m and do that the next day?

I would make it up then chill it quickly. Next day just pop it in oven but give it 5-10 mins longer and make sure it’s hot all the way through.

I'd cook the cauli, and make the cheese sauce. Put the cauli in the cheese sauce, cool and fridge.

I'd add the breadcrumbs and crumbled boursin the next day before putting in the oven to finish cooking. As pp said, it'll need an extra 5-10 minutes in the oven as its cooking from cold rather than warm.

It looks delicious!
