Nicest chocolate for melting

I’m trying to find a really nice dark (but not too dark) chocolate for using in rocky road, dipping shortbread etc, that isn’t too bitter that adults and kids will enjoy. So far I haven’t got there yet so please tell me what you use.

Generally if I don't have any bar chocolate that needs to be used up I tend to buy the Callebaut Belgian chocolate callets, which you can get in either milk or dark depending on preference.

We use Bourneville. Dark but not too dark or bitter.

The only thing I use melted chocolate for is icing my chocolate chestnut log at Christmas.
I find gently melting Nutella in the microwave produces a delicious hazelnut flavoured liquid chocolate. Irresistible!

Thanks. I forgot about bourneville, I remember using that when the kids were small and it was a good one. I haven’t seen Callebaut, will seek it out.
