My recipe
Tomato and Lentil Soup
This is a very rough recipe ? I make it up as I go along with whatever is lurking in the cupboards/ fridge.
Basic ingredients:
Big tin of tomatoes (I chop them up a bit)
Handful or 2 dried red lentils
Some other things to add:
Sauteed onion (you won?t notice it once you blend the soup but it adds flavour)
Potato, chopped into small cubes (I find lentils cook better when boiled with a spud. No idea why)
Carrots ? chopped up
Celery ? (sliced thinly-ish)
Garlic
Other veg
Spices if you like (Tabasco sauce, paprika, chili powder, whatever you fancy)
Stuff to add at end, if you want to:
Cheese
Cream
Spinach
?Bring the tomatoes (juice & all) to boil
?Add other veges. Bring back to the boil.
?Add lentils.
?Leave to simmer until the lentils are soft (~ 45 mins ? 1 hr)
?Carefully blend using a hand blender to get desired consistency
?Add seasoning as required (lots pepper, bit of salt)
?Serve immediately or leave to cool & reheat later
?Add ?stuff to add at end?
Freezes well
