Help with gingerbread recipe

I make this every year but will need some on different days.

The recipe states to leave the dough for at least 30 mins in the fridge but could anyone in the know tell me if it would keep for a few days in the fridge?

It will be fine for a few days in the fridge - you could always drop some in the freezer if it's going to be longer/worry you.

Ah that's fab, thank you both. I hadn't thought of the freezer! That might be better actually!
