what veg would you serve with this?

I'm making chicken cacciatore (from Olive magazine) and serving with roasted baby potatoes with olive oil and rosemary.

What veg shall I do?

ps. it's for a mid week, family birthday meal.

I wouldn't do any veg or potatoes with that. I would ladle it into bowls and serve with crusty bread and butter.

If you want veg and potatoes I would do mash and carrots/broccoli. If you served me salad with it I wouldn't eat the salad. I don't like it with wet type food.

I won't do mash as DH doesn't like it.
I am doing a home made focaccia with it though to soak up the sauce.

Salad won't work here at the moment as 1) it's too cold) 2) I'll be eating a larger portion of the veg instead of the chicken.

I'm loving most of your suggestions so I shall head to my veg man tomorrow and see what he has in the way of
sprouts
green beans
tenderstem broccoli
kale
chunky carrots
and let his availability be the decider
