Recipe for a sticky rich ginger sponge cake

I’m looking for a recipe for a sticky rich ginger sponge cake. I’m not sure if that’s the right name for it. I had it a few years ago at a party - a sponge cake that was gingery (definitely had ground ginger in it as well as crystallised), and was moist and rich and decadent. Paired perfectly with custard. Was almost like a pudding. Dying to recreate it on these cold dark evenings!

There's a hairy biker one that has chilli in it, it's amaaazing. Very gingery, with a bit of a kick. I think the recipe had a sauce too but I left that off. Might attempt that again actually...

I've got a lovely ginger cake recipe in my hand written book; I think it was originally from the Two Fat Ladies and I'm not sure if it's online. Will write it out tomorrow if you like (too knackered now!).

This recipe is lovely, and includes fresh ginger. Lots of ingredients but totally worth it - so rich, dark and sticky.
