How to make rosti like this?

The DCs love these rosti but any I make fall apart, are an entirely random shape and texture and only I will eat them.

I use Mary Berry's recipe - you can leave out bacon etc. thehappyfoodie.co.uk/recipes/mary-berrys-crispy-bacon-rosti-with-fried-egg/ . The key is to drain and dry the potato beforehand.

Bake in muffins trays?

Mary Berry is usually reliable, I'll give that a go. I have crumpet rings actually.
