Suggestions for preparing/freezing in advance for Xmas lunch

We have 16 for Christmas lunch, however I will be away for 7 days and not returning until afternoon of Dec 23rd. No flipping clue how I will manage.

Any tips for preparing ahead, has anyone heard of half preparing roast potatoes and freezing them? I will make the stuffing and have that frozen in advance.

This is the recipe you need for your roast potatoes and use this for freezing your carrots and parsnips]]
You can also freeze red cabbage, gravy and bread sauce.

I have currently made:
Braised red cabbage
Yorkshires (controversial but dc won't eat potatoes)
Stuffing
Cauliflower Cheese
Apple butter for glazing ham

I also want to make pigs in blankets ASAP.

Always reluctant to freeze veg as I think it can be much more inconsistent based on how fresh it is etc, so I don't risk that.

All of the above. Also, par-boil and fluff up your potatoes and freeze way in advance. Add them frozen to hot fat.

Try the Batch Lady. She has a full series of recipes designed for people making their Christmas lunch ahead of time and freezing it until Christmas. She has some excellent tips.

Does everyone do a starter on Christmas Day? We also have 16! With one vegan, and 3 vegetarians.

I freeze all of these ahead:
Chipolatas
Stuffing loaf
Yorkshire puddings
Potatoes

Red cabbage
Gravy
Bread sauce
Cranberry sauce

Then I just peel some parsnips and carrots the night before (straight to roast, no par boiling), and on the day pan fry the sprouts. The freeze ahead roast potatoes are a real triumph.
