Birthday cake recipe ideas?

It’s my birthday today and I’m looking for inspiration for my birthday cake which I’m going to make with my 8 year old. I would love to hear some recipes that are a bit more interesting than Victoria sponge or chocolate cake, but my DC don’t like fruit or jam in cakes. We are fine with nuts and I can get pretty much any ingredients today. Any suggestions? Thanks!

If your DC like or don't mind cinnamon, this is a great recipe. It might look complicated but once you have everything ready, it's really easy. Oh and Happy Birthday!!

EDT: there's no coffee in it, it just means it's usually served at coffee time (US!) :-)
