Anyone have any recipes a bit different to the norm?

From the Green Roasting tin:
400g sprouts, halved
175g jarred artichokes, chopped
1 tablespoon oil from jarred artichokes
300ml single cream
1 tablespoon lemon juice
100g Stilton crumbled
Black pepper
50g Panko breadcrumbs

The final three ingredients go on top and you cook in the oven at 180 fan/200.

I have sometimes used vacuum packed chestnuts instead of the artichokes. It’s good with bacon.

I chop them and put them in a shallow baking tray. Drizzle with olive oil and a few chopped cloves of garlic. Roast and then when they're slightly browned take them out and squeeze some lemon juice on them.

I cut mine in half, put them in the wok with a little oil and cook them that way for a while then I add bacon and very finely chopped onions. I always have to cook twice as much as I need because they seem to disappear every time I leave the kitchen...

I toss mine in a bowl with olive oil, honey and salt and pepper and roast them. The honey really takes away some of the bitterness

Brussels sprouts remoulade.

Mix dijon mustard, lemon juice, salt and pepper into mayonnaise.

Halve the sprouts lengthways through the core, then julienne them. Fold the slices into the mayo.

It gives a lovely nutty flavour and crunch; the mayo takes away any bitterness. And because it's raw you get to enjoy it twice: once on the way in, and again a couple of hours later when you're farting like the Space Shuttle on lift-off.

Shred them, parboil for a couple of minutes, fry with olive oil, chopped onions, garlic, cubed pancetta and chopped chesnuts.

Literally my favourite part of dinner.

Once steamed, toss them in warmed butter with maple syrup, black pepper & chestnuts & brown until begging to caramelise. These are our favourite

Ching he huang has two lovely ones in the Asian green cookbook. One where they’re cooked in sweet chilli and served with coconut noodles and another where they’re in a wild rice salad with an orange soy glaze. We make both regularly.

I've just re-watched Nigella At My Table and she does halved raw sprouts in sautéed leeks, preserved lemons, cinnamon, garlic and simmered in hot water. I'm going to make them this weekend.

I like to cut them in 4 parboil and then toss them in a mix of toasted sesame oil, soja sauce, clementine/mandarine juice and zest and then roast them at a very high heat for 10 minutes wish

There are a few other tray bakes in the Roasting Tin cookbooks which look good but haven't tried them - roasted with tamarind and chickpeas / hallloumi and harissa.
