Freezing a pie made with gluten free puff pastry

I have a pack of jus rol gluten free puff pastry (from the chilled aisle, so it's not frozen) the pack says not suitable for freezing (not sure if that means in cooked or uncooked state).
I have some apples that need using and wonder if I could bake them in a pie and freeze to eat at Christmas? I'll probably be on my own so it would be nice to eat something from the garden.
Has anyone successfully frozen a pie baked with this pastry? www.jusrol.co.uk/products/gluten-free-puff-pastry-sheets

You could always freeze the apples and use them at Christmas with a new pack of pastry and use this pack now?

Usually that warning is on the pack as it has already been frozen, so it wouldn't be safe for you to refreeze and defrost the pastry. Baking it first would make it suitable for freezing. I haven't tried it before, but might be worth a go.
