Easy veggie meals for two

We've decided we need to simplify our meals on a week night, especially now there's only two of us and we're both working full time.

So far we have:
mushrooms on toast
jacket potatoes and salad/cheese
veggie sausage, mash and frozen peas
oven chips, veggie pies and frozen veg
Higgidy quiche and salad or vege
pasta pesto with 'bits' like rocket, feta etc
roasted vege and halloumi in pitta or wraps
roasted vege and paneer with spices on top of a naan bread
M&S cheese and onion fake fishcake things, with salad
quick stir fry and microwave rice
omelettes and nice bread and salad

The biggest problem here is it's getting too cold for salad!

Any more ideas very much appreciated.

Roast baby corn, peppers & asparagus (or other green veg), make a sauce with a little veg stock, peanut butter & juice of a lime & serve with noodles.

Chickpea curry is another one I like that's pretty simple.

I do something very similar to this, but hadn't thought of roasting the vege. That would make life much easier!

Yes to chickpea curry. I too often over-complicate curries - need to go back to basics!

I love pasta. Probably have it twice a week. Non tomatoey pasta:

Creamy garlicky mushroom pasta. Can be done in the time pasta takes to cook if you don’t bother with onion.

Creamy fennel pasta. Surprisingly delicious.

Roasted veg pasta with chilli pesto. I like butternut squash, onion, pepper lemon and fennel.

Courgette carbonara. So yum.

Also on my quick and easy list:
Linda McCartney burgers with chips.
Pieminister pies with mash.
Fajitas with veg and paneer or haloumi.
Stirfried veg with straight to wok noodles.
Pan fried gnocchi (I like the rana spinach ones) with roasted Cauliflower and a cheese sauce.

Also a super simple one, spaghetti with just chilli & garlic & olive oil it's actually delicious & so simple!
Or mac & cheese with sweetcorn.

DP loves Pieminister pies!

Yes to mushroom pasta. I like the sound of butternut squash with chilli pesto.

I don't see macaroni cheese as quick - and it creates a lot of washing up too. I do love it though.

You're probably right, I cheat with using Bisto cheese sauce & ready grated cheese for the topping & chuck it under the grill. I make my teens wash up 😅

I love roasted veg spiced with harissa, served with giant couscous and feta

Stir fry (usually one of the meal deal ones with veg, noodles and sauce) with cashew nuts toasted and added

Fry off mushrooms and onion
Boil pasta
Make pack of creamy peppercorn sauce
Mix the lot together - yummy and quick.
