I am a complete food novice Blush

If a recipe calls for 1.5lbs of Italian sausage "cooked and crumbled" - what could be used? Salami? Regular sausage?

It's for a lasagna from the Friends cookbook that my DDs are wanting to try to make Smile

Regular sausage or sausagemeat, maybe add some extra herbs if it’s not very herby. Some has fennel or fennel seeds in so you could add some of that if you have it.

Italian sausages are very high meat content, often flavoured with fennel. They are available in lots of supermarkets, as well as delis.

If you can't find them, I'd simply use minced pork & add a touch of ground fennel.

If you like spice you could use regular sausages mixed with ndjua paste and toasted fennel seeds, I guess it would depend on the recipe though.
