Gluten free lunch

My friend is coming over for lunch tomorrow. She is going through cancer treatment so her appetite is variable and she can't have anything too out there. So I thought I would make some lovely soup but wondering what to have with it to make it a bit more hearty. I would usually go with crusty bread or perhaps a quiche but she is gluten intolerant. Any ideas?

Extra bonus points for gluten free dessert ideas too!

You could make a couple of small baked potatoes. When I serve them as a side rather than a main I do the version when you scoop them out and mash with butter or sour cream and then grill with some cheese on top.

For gluten free dessert I love lemon polenta cake and because it's moist it keeps well. You need gluten free baking powder but might have some already. I just checked and the Dr Oetker one I buy happens to be gluten free. Recipe from Nigella here www.nigella.com/recipes/lemon-polenta-cake

My DH is GF and really likes the Warburtons Gluten Free Tiger Bread if you're happy to stick to your original plan for soup with crusty bread? For dessert, Guu do some little free from pots which are lovely, Aldi do their own version too.

For pudding, you could do chocolate mousse, meringue roulade, chocolate cake or rice pudding with pecans, maple syrup and plum compote.

These Schar frozen rolls, warmed in the oven, are excellent with soup.

If you're making soup do check your stock is GF.

You could serve a baked potato or salad of some sort (chicken and potato salad is fine) or quiche.
