Best way to cook smoked haddock?

I am cooking a very small piece, I find it often goes dry

How do I cook?
Is boiling water and a knob of butter best?

Let me rephrase the question

Best way to cook smoked haddock without milk....I can cope with a bit of butter but not a load of milk!! Sorry!

Wrap in oiled foil with a know of butter and pop in the oven for 15 mins. Check if cooked through.

Same a Roses - wrapped in butter and foil and I either steam it if I am steaming veg to go with it or roast it if the oven is on.

If not poaching in milk (which would be my preference), I'd microwave it on a plate with some water on it. So steam it, basically. And then I'd add a big knob of butter and a good grind of black pepper :)
