Vegetable lo mein pinchofyum.com/lo-mein is my usual recipe.

I also make a vegetable nasi goreng with chopped mixed vegetables, cooked in a samba olek paste or gochujang paste then add cooked cooled basmati rice (or I use pouches of microwave rice) and enough kejap manis to taste. Serve topped with a fried egg and sriracha.

Tonight we are having shakshuka, we add peppers into the mix too. Really tasty.
Last night we had a root veg bake with gnocchi crust it was an Able and Cole recipe.
My go to recipe for cod fillets is to marinate in yoghurt with tandoori paste and Nigella seeds then bake and serve with dry roasted spiced cauliflower, a green salad and mango chutney.
For even quicker tuna steaks cooked on the griddle with plenty of black pepper, rock salt and balsamic vinegar, with garlicky green beans and tender stem broccoli also cooked on the griddle.
Tomorrow we got big field mushrooms stuffed with cous cous, red onion, garlic, the mushroom stalks and finely chopped courgette, topped with wholemeal breadcrumbs and mozerella. Not sure what veg I will do with it yet.

Piece of white fish)
Salsa (hot or mild)
Low fat cheese
Mixed herbs

Partially cook the fish. Top with salsa, cheese & mixed herbs. Put under the grill until cheese is melted. We have it with baby new potatoes & veg.

Tuna steak, cooked rare with ginger, honey, soy and vegetables

Almost any fish with lemons, capers and butter - sea bass is great

Thai veg curry using Thai green or red curry paste: stir fry sugar snaps, green beans, baby carrots, sweet corn and water chestnuts (or whatever veg you have), add curry paste to a tin of coconut milk, simmer, then add fresh basil if you have it.

A recipe by jack monroe is chickpea and peach curry. It makes a lot and can be eaten over two nights or frozen. This recipe uses tinned chickpeas, tinned tomatoes and tinned peaches. Very easy but tasty dish.

Fish pie mix of fish from supermarket. Usually has cod, salmon and haddock. Make a cheese sauce and poach all the fish in the sauce. Takes about 10 minutes on a very low heat. Serve with new potatoes and veg. Simple, quick, healthy and delicious.

Salmon, salt, pepper, roast in oven... stir into fresh pasta with a knob of butter and handful of chopped parsley. Serve with a wedge of lemon.

Ramen with poached chicken or steamed salmon, sometimes just with veg.
Soy, ginger and sesame baked salmon with loads of roasted green veg, sweet potato wedges or rice.
