Can I freeze the rest? In an ice cube tray, for example?

Yes! It needs a bit of a stir when you defrost it (or that might be cos I tip it straight from the ice cube tray into the pan...) but it works really well.

Yes! I freeze left overs all the time. An ice cube tray will allow you to have better control over how much you use.

You can get powdered coconut milk from Waitrose, so you can mix up the amount you need .

Thanks everyone, and yes, I should swap to the powdered version. Don’t know why I haven’t, I packed Dc off to Uni with a few packets in the grocery box.
