... you know the one: no biscuit base, just caramelised yum.
Has anyone frozen it successfully?

Yes! I freeze it in slices because theres only two of us and I'm greedy. I double wrap in cling film then cover in tinfoil. To defrost I stick it in the fridge in the morning and it's perfect after dinner. I've heard you can freeze a whole cheesecake too. As long as it's full fat it will freeze well.

I've never frozen cheesecake, but the local fancy artisan baked cheesecake company freezes all of theirs to make things easier t get ready for all tge farmers market weekends and I turns out perfect!

Hmmm, away to get myself a good basque cheesecake recipe though, this has put me right in the mood, thanks!

Can you share the recipe for this wonder please?? 😁

shallIswim · 27/10/2021 18:19

Hold on tho because no one has eaten it yet!
It's this minus the licquorice sauce. I'm serving with a roast rhubarb compote

Thanks! Yes the liquorice sauce is a nono. I await your review 😁

What a coincidence - I just made one today! It disappeared very quickly so I can’t imagine having to freeze one.

shallIswim · 28/10/2021 08:38

I admit it was a struggle @Mominatrix. But it's for dinner at a friend's house at the weekend and it was my moment to make it. They're basically just air tho aren't they? Grin. So no harm in scoffing!!

Update: it was amazing. The beauty of this cheesecake is that it's a blank canvas and you can serve it with seasonal fruit. So I cubed up some of our apples and roasted them, adding raisins and a splash of brandy. A month or so again I'd have used plums, and it the height of summer I'd have used berries.
