So many pumpkins go to waste, don't they? I've got a small/medium culinary pumpkin and two large carving pumpkins. The carving pumpkins usually go on the compost heap afterwards except the seeds, which I roast. I'd like to use the culinary pumpkin at least as a base for some soup - something easy and not spicy as all ages will be eating it. I've got some potatoes to use up so they could be included - or not. Many thanks.
