Vegetable soup.

Casserole, with a cheap cut of meat, packed out with loads of veg.

Both can be done just using leftovers and what ever is left in the fridge.

God I'm smug tonight. Normally just pasta and tomato sauce with cheese for a cheap meal.

Liver (and bacon) casserole: lambs liver, streaky bacon (optional), onion, potato, bit of vegetable or beef stock or Bisto or something.
Slicethe onions and potatoes, cut the bacon into short strips and the liver into same-sized lumps. Put a layer of onion at the bottom of the casserole dish, then liver, then spuds, then bacon, repeat till everything's in, tip the stock/water over to cover and shove in a medium hot oven for about half an hour or until potatoes are tender.

Tomato gravy over Rice

Fry up some streaky bacon that has been roughly chopped with some one white onion also choppped. Pour over two tins of plum tomatos and simmer 20 minutes. Serve over rice.

Doesn't sound like much but it is lovely

Cheese on toast with a poached/fried egg on top - I love the way the egg and melted cheese taste together. If you have ham you can add this aswell yummy.

Dalh - cheap as chips and uses red lentils and a tin of tomato (instead of coconut milk)

Pasta bake - I use cambells soup as a sauce and add a little water and stock, mix with cooked pasta and add some cooked chicken then pop in the oven with some grated cheese sprinkled on top for 15-20 mins on gas 4.

Beef casserole. 1 pound of stewing beef, three carrots roughly chopped, two parsnips cut into big chunks, quarter of swede cut into big chunks, 4 potatos sliced thinly, 1 tin of tomato, 2 pints of stock with 2 tablespoon of tomato puree added, one palm full of pearly barley and lastly 1 tablespoon of plain flour.

Put all the vegtables and meat into a 4 pint casserole dish sprinkle the flour over the top and then add the tin tomatos chopped and then pour over the stock, sprinkle over the pearl barley. Put the lid on the casserole dish and place in the oven on gas 3 for 4 hours - after two hours reduce the heat to gas 2.

This will produce 8 portions of beef casserole and cost in the region of £3.50 depending on where you get the beef (try getting a cheap cut that you need to cook for a long time)
