Crystallized ginger

I found a tub of crystallized ginger which I must've bought for something and found it's use by date is May 2021.

Could I still use it now? it's unopened.

I'd use it.

It will be full of sugar. Sugar is an excellent preservative. It will be perfectly fine for some years yet, no matter when you open it.

I would imagine it will be fine until the next century with all the sugar preserving it!

I used ginger that was years past it's date. It just goes a bit drier, it's absolutely fine for years.
