Anyone got a firm fave that’s simple and delicious doesn’t require too specific ingredients? Open to cake, buns, biscuits…

Would like to whip something up for my neighbour’s birthday. I have the usual staples in stock but can’t get to the shop for any ingredients I don’t have!

If you've got some apples, then try Mary Berry's Apple Cake.

I'm an absolutely rubbish baker, and even I can't mess that one up - it's a one-step mix and very simple. Delicious too.

Classic Victoria sponge. 4eggs, 8oz everything else plus a bit of milk to get the right consistency for the batter. 2 tins, 20 mins in the oven at 180. Jam and buttercream (if you can be bothered), icing sugar on the top. Everyone loves a Victoria sponge.

Watching! No matter what I do with cakes I CANNOT get them to rise at all. Any other batter, bread etc is glorious, but even after buying premade cake mix and adding the things it requires I can't get it right Sad

Don't go by set measurements for a standard sponge.

Crack eggs into a jug and weigh. If they come to 116g for example, then you use 116g or flour, 116g of sugar and the same of butter.
I've never had a sponge go wrong using that method.

I've made this Banana and Chocolate loaf cake countless times and it's yummy and always gets compliments. Be sure to beat the mixture thoroughly though. You can use baking chocolate or posh Belgian chocolate. I fool myself it's good for you because of the bananas!

Anzacs! Ingredients keep for ages so you can buy in bulk, and you can whip up a batch and have cooling on racks within 30 minutes.
