I’ve tried a fair few but delias are always the repeat performance for me. Everyone loves them and at Christmas they get eaten before the meat ones. I do use ready made puff pastry though!!

We have a friend who makes those Delia veggie sausage rolls and they are absolutely delicious. I haven't made them myself but do plan to at some point. She says they are easy.

I use ready rolled puff pastry and use a 50-50 mix of stuffing mix made with less water than usual, and the sausage "meat" from the insides of vegan Richmond or taste and glory sausages.

Pretty sure I originally got the idea off one of the Christmas threads but it was using regular sausages instead.

I had amazing veggie sausage rolls at the Imperial War Museum cafe (of all places, I think it was a rationing recipe) which I've basically recreated. Blanch peas and broad beans, dry well, smoosh up with a little garlic and cream cheese, stick in pastry. So good.

I do similar to Burgerquuenbee. Or, if very lazy and only family eating them, I sometimes just shove frozen veggie sausages into leftover bits of pastry and bake. Not pretty but tasty enough.

Granose do a vegetarian sausage mix which you can buy at Sainsbury's. Just add water and roll into sausage shape and wrap in pastry. Perfect

Em, Linda Mc Cartney frozen ones. My idea of effort is brushing a little milk on them to make them a bit browner, but even that is sometimes too much effort!Grin

I made a mushroom and pearl barley 'risotto' with rosemary in, and used that with packet puff pastry, it was delicious.
