Would cauliflower and aubergine work together in a curry?

I've got a cauliflower, three aubergines and lots of tomatoes so I figure it's a veg curry for dinner tonight.

But will those two (the cauli and the aubergine) go together ok?

I would make an aubergine curry and roast the cauliflower in spices and we’ve as a side. You need to aubergine to go soft but the cauliflower will be nicer a bit crunchy

As I have a new audience Grin, may I ask how many /what weight of fresh tomatoes should I use instead of a 400g tin?

I use about 5 fresh eating/salad tomatos or 2-3 beef tomatos (preferred) for one 400g tin.

I don't bother removing skin/seeds. I just chop up the whole toms.

I hate soggy veg in currys. Not keen on any veg in currys except onions. Aubergines would just be slimey. Yuck. But everyompne's taste is different.

Veg doesn’t have to go soggy in a curry, and aubergine doesn’t have to be slimy either. Although I do love a properly cooked down aubergine. Yum yum.

They would definitely work in curry! This is my favourite Cauliflower curry recipe - and I definitely think you could roast the aubergines and put them in too!

Aubergine is a very popular vegetable in India. Lots of different varieties are grown and eaten. I’m Indian and my mum made at four different types of aubergine curry when we were growing up, all completely different from each other.

Also I can vouch for the Meera Sodha pav bhaji recipe linked above.
