Sausage casserole recipe please

I love cooking but I haven't ever made one of these

Fancy it for dinner

What do I put in it is it like a stew but sausages? Sorry I haven't got a clue

Seems there are beans in a few recipes I looked at online? Any favourites?

I do a variation on this - I leave out the baked beans, and do it on the hob.

(Can’t remember if the recipe has it or not, but I use fennel and cumin seeds in it too)

I've got a wide le creuset style (Aldi) cast iron casserole dish that's good for these things, generally lightly brown the sausages, remove, red onions, finely diced carrots, mushrooms and chunky cut red/yellow peppers, cook until softening, add garlic and a good amount of smoked paprika cook for a few more minutes. Put the sausages back in add a stock cube and a splash of hot water, couple of tins of tomatoes, squirt of tomato puree, season and add a pinch of sugar. I usually add a handful of herbs from the garden, sage/thyme/oregano but dried from the cupboard will work fine, bring to a simmer, add a can of drained and rinsed butter beans, lid on in the oven 160-180 about 45 minutes, will take longer on a lower heat if you're going out etc. Serve with crusty bread or mash if you're especially hungry. Freezes well.

Chuck it all in the slow cooker, can’t go wrong in my opinion

I make a lovely one with sausages, onion, garlic, tinned tomatoes, tinned chickpeas and spinach plus a bit of nduja sausage (chorizo would be as good probably)

I always use the HB one too. I sometimes change things up a bit and use chicken thighs as well as the sausages, or use different pulses. It's always a hit.

We had it with mash but I did say next time I'll have it with rice instead. You could definitely miss out the beans if you wanted. My 13yo has just eaten them for the first time after previously refusing and he loved them!!

We have cheats casserole. Cooked sausages, tin of taco beans in sauce, glass of water. Mix, put, covered, in oven at 180 for 30-40 min. Serve with cheesy, garlic bread slices.

Nigel Slater has a lovely recipe in Appetite which he just calls sausage and mash but the sausages are done in the oven with loads of lovely onion gravy. It's awesome but not available online that I can see - this is the nearest. Can be done in the slow cooker and abandoned for the day quite happily too.

Haven't had it for ages and am now going to have to make it at the weekend!

Star Wars Stew! (A recipe from Blue Peter in the 70s)

Parboil potatoes and carrots
Cook sausages in the oven.
Add tinned tomatoes, a tin of baked beans and a tin of sweetcorn to the potatoes and carrots with some Worcestershire sauce, mixed herbs and salt and pepper. When the sausages are cooked, cut up and add. Cook the whole lot in the oven (may need to add water so it doesn't dry out).

Not haute cuisine but a firm family favourite here.
