A delicious alcohol free Christmas cake?

I gave up alcohol completely 18 months ago, so my favourite, boozy Caribbean rum cake is out the window. I think the traditional British cake recipe is quite alcoholic too. Is there a delicious, rich, moist cake recipe I can make ahead that isn’t alcoholic?

Or is that wishful thinking?

It's generally the alcohol that preserves the cake isn't it? So without that it'll presumably need to be kept in the fridge or freezer if you make ahead.

I have squeezed oranges before (more than specified) and reduced it down to replace booze. Or a cup of good tea. Ginger beer. Pineapple juice reduced. Home made rhubarb syrup might be good.
