Need Christmas cake recipie that I can royal ice but not almond ice ...

DS1 has a nut allergy meaning I obviously can't put almond icing on Christmas cake but I would like to do a traditional fruit cake (sans almonds) and royal ice it. Will the Royal icing 'stick' without the almond icing or does anyone know of an alternative cake type that I could bake and royal ice ... want to fork it up so as it looks snowy so don't want to use fondant icing.

Any ideas?

Ideal cake for you is featured in this months PRIMA magazine (Page 141). It features a traditional fruit cake with Royal Icing that they've 'peaked up' just like you want to do. Can you get the mag or do you want me to type the receipe etc here?

I've used fondant icing in place of marzipan then just put the royal icing on top.

It worked really well

And Katiemac ... thank you too!!! Sounds ideal solution cos I think something needs to go between the cake and the royal icing - bingo!!

PS if you put yellow food colouring in the royal icing....it looks like marzipan
