Homemade sausage rolls

Tomorrow, I plan on making a batch of homemade sausage rolls.

One thing I'm a bit confused on is the meat to breadcrumb ratio! Recipes vary and I don't want them to be too dry or dense!

What ratio do you use? What works for you?

I never add breadcrumbs personally - just seasoned sausagemeat.

I don’t use breadcrumbs for sausage rolls. If you want to bulk out the mixture to reduce cost then it’s fine but otherwise I stick to meat.

We don’t add breadcrumbs but we do add finely chopped onions, peppers and chilli flakes and a dash of Sainsburys Tomato & Jalapeño burger relish just to finish them off.

Interesting! All the recipes I've looked at include breadcrumbs! sigh

I have minced pork, onion, sage, thyme, salt & pepper and breadcrumbs!

Should I just have bought a pack of nice sausages instead and embellished them do you think?

It's probably because you're using minced pork rather than pre seasoned sausage meat. I think most pre-made sausage meat contains either bread or potato starch.

I don't use breadcrumbs. Pork, softened leeks or onions, dried sage, white pepper and nutmeg.

Although my sister makes some with pork mince grated apple and a packet of sage and onion stuffing which are really good

Sausage meat contains rusk already, if you are using pork mince you may need to add some

Bought, ready made sausagemeat includes some bread product, so it will be fine to add breadcrumbs to your pork mince.

What type of pastry are you going to make? I find rough puff works well for sausage rolls.

I don’t add breadcrumbs but I do add sausage meat stuffing (layered on top of the actual sausage part) which definitely contains bread so I also think you adding breadcrumbs will be fine and give you a better texture as you’re using minced pork - you don’t want it falling apart as you eat.

No idea on ratios though, I’m an eyeball it type of lazy bones cook. Hope they turn out nice for you!
