Batch cooking ideas for veggie hating DS

My 6yo ds is super fussy and both dh and I work full time, so I usually batch cook meals for him every month or so and portion up in the freezer for him to eat on school nights. I’m looking for ideas on some new recipes I could try as I’m getting a bit bored of doing the same things every time. Usually I make a mild chicken curry, bolognese, a hidden veg pasta sauce, sausage casserole plus some mini burgers and sausages. I want to try and make some things that will get some sort of veg into him as it is really difficult to get him to eat them (definitely has a few sensory issues going on).

Things he will eat:
All meat
Tomato based sauces
Most carbs e.g. potatoes, rice, pasta, bread etc.
Cannelloni and haricot beans
Spinach and beetroot blended into a sauce
Spices like cumin, coriander etc.
Roasted carrots
Is starting to eat small amounts of squash and red pepper but not much yet
Cheddar and mozzarella
Fruit inc. dried fruit

Things he won’t eat:
Fish
Eggs
Pretty much all veg that he can identify as such
Lentils
Cheese like feta and goats cheese

Anyone with some great ideas would be much appreciated. I’m working on getting him to expand his palate, and we do grow our own veg, but I find that after school is not the time to do this.
