What type of cream is this?

We were on holiday and the cakes were delicious. Multi layer sponge cakes with a sweet cream filling and thick coating of the same cream topped with a layer of coloured cream which was often shiny. It wasn't fresh cream, tasted sweet and more dessert like, I am not describing this well at all!

Ermine buttercream perhaps?

AlbertBridge · 15/10/2021 21:16

Could the shiny later have been a ganache? (Chocolate melted with cream, that gardens to a shiny shell? Could be white chocolate and coloured?)

Where were you on holiday? The area might help.

*hardens! Not gardens 😂

I've never even heard of this, could well be thank you!

Creme patisserie?

IGotHam · 15/10/2021 21:22

Where on holiday? That might help give a clue

Mock cream or creme pat? Depending on the cake could also be like a soft meringue or marshmallow filling?

Mock cream is a good shout. It was delicious, light and fluffy and stayed intact on the outer of the cake.
