FIL has recently got a new girlfriend who doesn't eat carbs, so now FIL doesn't eat carbs. He bulk ordered a lot of various shapes of good quality dried pasta online last year Hmm, which he now doesn't want so we have inherited it. We actually don't have much storage in our house currently so it is currently lining our bookshelf and needs to be eaten. But we are already tired of our usual pasta recipes, so are looking for some inspiration.

No dietary restrictions etc, only thing we don't love are creamy mushroom sauces (although mushrooms are fine when not the main focus). All ideas appreciated, thanks!

Easier and best:

Get a handful of sage leaves, fry in butter until the sage is crispy and the butter is just brown. Flip your pasta in it (or steak, an old shoe whatever) and eat.

Harissa Orzo - lots of recipes online which involve prawns, but I’n vegetarian so like to pan fry strips of courgette until crispy and sprinkle over some feta instead.

Artichoke Linguine is one of our favourites - chilli, garlic, lemon and Italian hard cheese with spaghetti or linguine, with a pack of chargrilled artichokes stirred through

Roasted veg, red pesto and goats cheese.
Prawns (raw ones better to cook with than cooked ones) chili, oil, fresh tomatoes, lemon and rocket.
Both better with linguine/spaghetti etc than other shapes, I find.

Love duck ragu (or any meat ragu) in giant shells
Not usually that bothered about pasta bakes but this is great:

Also if you have orzo to use up, NYT again (sorry paywall) have a great recipe for shrimp scampi orzo, a quick Google suggests there are other recipes out there, maybe worth trying

I make crab linguine...boil pasta, heat crab gently in some butter with a pinch of something chilli-ish (fresh or dried whatever you have) a bit of mace or nutmeg never goes amiss, at the last minute whip in some snipped chives, and then tip in the cooked pasta, shake it about and serve, grated parmesan if you can bear it with the crab. SOmetimes I think it's an abomination and other times I love it.

Chicken alfredo, also good but maybe fits into your mushroomy/creamy exception??
Beefaroni....I always seem to have lots of "gravy" left over when I make lasagne, so I keep it and then for a quick evening meal I add in pasta...depending how much leftover gravy/ragu there is I sometimes boil it, and other times just dry, into the oven with it with a fucktonne of grated parmesan stirred through and dobs of mozzarella on top

Orzo...that's great to add to anything casserole-ish or go in an oven tray to oven bake with some good stock, those jar artichokes and tomatoes/peppers, herbs and some chicken thighs resting on top so they get all crispy skin and the orzo will bake into the stock.

Stellini ...make minestrone/ribbolito and put it in.

We've enjoyed quite a few orzo recipes from Gousto - can't think of what specifically but I think there were prawns involved!

Orzo salads for lunches.

Cook the orzo, while cooking, drizzle with a good dash of olive oil, stirred through to prevent sticking.

Chop a jar of sun-dried tomatoes up. Add the tomatoes and as much as the liquid from the jar that you want, to taste. Stir through sun dried tomato paste.

And halved cherry tomatoes, shredded basil and spinach. Season to taste.

I love pasta, but it’s currently off limits as am on a keto diet, which is working but SO hard!

Favourites here are:

Jamie Oliver courgette carbonara
Bacon and aubergine pasta, with a tomato and chilli sauce
Venison ragu with parpadelle
Seafood spaghetti with prawns and tuna
Prawns and sun dried tomatoes in a chilli-vodka sauce
As a store cupboard last minute dinner- tuna, olives and green beans in a spicy tomato sauce.

Am craving pasta now!

Make a ratatouille, add pasta shells and cheese sauce, top with bacon and bake in oven.

Cook pasta shells with cheese sauce, heat tin tomatoes and tuna. Eat together.

add parmesan to both above.
