Mix with cooked, chopped spinach and stuff it into cannelloni.

Unless it’s not super nice ricotta, in which case put it in something to hide the fake taste.

Baked ricotta. Just slop it on a baking tray, cover with rosemary twigs, garlic (don't bother chopping) mix with pasta and sundried tomatoes when cooked. Delicious!

Dump into baking dish with lots of cherry tomatoes. Drizzle with olive oil, sprinkle with thyme, chilli flakes and lemon zest. Chuck in garlic bulb. Roast until tomatoes soft. Take out oven. Throw in cooked spaghetti with a little of the pasta water.

I think I saw this somewhere or a version of.

This recipe is good DD doesn't like courgettes normally.

Stir in some honey to taste, and use instead of cream as a topping for poached or fresh fruit, fruit tart, slices of cake etc.

Use to make a version of Cranachan, or tiramisu.

Make a lemon & ricotta tart.

Stir in some chopped fresh chives & salt and serve with sliced tomatoes for breakfast. For a delicious "last taste of summer" Polish breakfast.

Make some crepes/pancakes ( a few and no sugar).
Steam some cut spinach.
Mix spinach and ricotta ( it has to be light green) adding salt, pepper and nutmeg.
Add to the pancake as if it were a cannelloni.
Put on a baking tray with butter and parmesan cheese.

You can also make them ricotta and ham.
I love them topped with bechamel sauce and parmesan but it is more fussy.
