Recipe for flat savoury pies like at Newens / Maids of Honour in Kew?

I've always made pies with shortcrust top only, and generally much deeper than these.
I can probably figure it out but does anyone have an actual recipe or method for this flat type of pie? Thank you!

Pithiviers are similar. I’ve made this one with puff pastry or there’s this one made with shortcrust pastry that might be more what you’re after.
It’s also quite similar to a Lancashire butter pie www.bbcgoodfood.com/recipes/butter-pie-apples-cheese
