Multi layered mousse (not mouse) & other fillings cake

I would like to make a cake like you see on Bake off for the showstopper which is layers of cake with layers of mousse or jelly or other things in between. I would like to make it for Christmas so thinking those sorts of flavours, maybe orange or rum. It can't be chocolate, either milk dark or white, and I need to be able to use df cream.
It's a long shot, but does anyone have a recipe that would work, or any terminology that I can search to find something suitable?

Mouse layer cake. Yum. All those squishy, crunchy, wobbly layers topped with whipped cream. I can see it now. Is this for your cats seeing as it's dairy free and full of mouse?

I have some moulds to make chocolate mice. They could make a nice filling.

Sadly, no chocolate is allowed in the cake, but would have been a great idea.

Confusingly, its called angel sponge cheesecake. I think you should be able to find it online, but if not shout, its in her ultimate cake book
The name is a bit misleading, the cheesecake style filling is sandwiched between 2 thin layers of sponge. The recipe says orange juice I used clemantine as I made it at Christmas
The instructions say to keep it chilled, and you do need to as the filling will melt if it warms up
