Using up hard salad ricotta

I've got a huge block of salad ricotta to use up. I bought it to shave over salads but I'm looking for other ways to use it up. Its definitely a savoury cheese so I can't use it in sweet recipes. Any ideas?

Use it like paneer - so in curries, marinated then bbq’ed or grilled etc

Agree with that. There's a nice ottolenghi recipe for a fairly simple lentil curry with coconut milk where you add roasted aubergine slices stuffed with a mix of grated cheese, mango chutney and lime juice that I've used ricotta in previously. Or if that's too much faff then just something like a pea curry broth with ricotta instead of paneer would be good.

Or mac and cheese! You can put all sorts of different cheeses in that.
