More interesting lunches - ideas and track?

It is way too easy for me to slip into toast for breakfast, followed by marmite sandwich or ham sandwich at lunch. So I'm trying to be better. But while I've pretty much nailed meal planning for evenings, I can't be bothered with that at lunch. So I'm looking for ideas of what you do for easy, but interesting, lunch. Or even perhaps a bit of a tracker thread where if you do something interesting, you add it here and then it's all available for future reference?

This week, I am quite pleased as three times I've had something that's NOT a sandwich:

  • roasted tomatoes, garlic and onion with couscous and some left over goats cheese
  • some left over fried halloumi which I made with some left over bits of broccoli and spring onion that I friend/chargrilled first. Then added some honey, lemon and garlic just before serving
  • Gyoza, rice noodles and salad veg with a quick dressing of soy, vinegar, honey and sweet chilli sauce.

Any other ideas?

Another one from a week or so ago that I want to do again is miso soup with some noodles and tofu.

Bacon bits with chick peas and spinach.
A really good vegan one is hummus, sundried tomatoes, spinach and avocado on toast. I mostly use frozen spinach.

I do a lot of soups now the colder weather is coming. More salads in summer.

I often have a stir-fry, but with different herbs & spices to make it e.g. Italian, Indian, etc

I like grilled tomatoes with balsamic vinegar, rock salt and pepper and poached egg on a bed of wilted spinach and mushrooms.

I love a rice salad. To make it quick I'll use a packet of flavoured microwave rice, with sweetcorn, red onions/spring onion, salad leaves, peppers & cucumber.

Some good ideas here. I like the egg/mushroom/spinach option and think I might add that to my lunch time list. Rice salad or stir fry of some sort (or some combination thereof) is also a good call.

I just remembered something I used to do often in the office - hot smoked salmon, spinach, readymade rice and some cremefraiche. All quickly and easily done in the microwave and the creme fraiche stopped it from being too dry. I stopped because the hot smoked salmon portions are so expensive but money is less tight these days so perhaps I can do that once a week or so.

If you're making lunch at work rather than at home I'd recommend the cookbook Made In The Office. Someone bought it for me as a secret Santa gift at work and after making the eggs florentine everyone else started using it. It's based on things you can make with just a kettle, microwave and toaster. Also came in handy during our kitchen extension 🤣
