It is way too easy for me to slip into toast for breakfast, followed by marmite sandwich or ham sandwich at lunch. So I'm trying to be better. But while I've pretty much nailed meal planning for evenings, I can't be bothered with that at lunch. So I'm looking for ideas of what you do for easy, but interesting, lunch. Or even perhaps a bit of a tracker thread where if you do something interesting, you add it here and then it's all available for future reference?
This week, I am quite pleased as three times I've had something that's NOT a sandwich:
- roasted tomatoes, garlic and onion with couscous and some left over goats cheese
- some left over fried halloumi which I made with some left over bits of broccoli and spring onion that I friend/chargrilled first. Then added some honey, lemon and garlic just before serving
- Gyoza, rice noodles and salad veg with a quick dressing of soy, vinegar, honey and sweet chilli sauce.
Any other ideas?
Another one from a week or so ago that I want to do again is miso soup with some noodles and tofu.
