I am obsessed by the chocolate mousse they do at Cote and want to recreate it.

Please tell me your best choc mousse recipes!

Thank you. That looks good and I don't need to go shopping!

It's bloody lush! Make sure you can leave it in the fridge for a good few hours, it's tonnes nicer IMO when it's properly chilled through 👌🏽

Thanks @Mamamamasaurus - I've just made it so that is very timely advice.

Licked the bowl obvs and it was DELICIOUS so thank you!

I've always used the Elizabeth David one, which is just eggs and chocolate, and I've never had a chocolate mousse I thought was better than that one.

The one that Felicity Cloake ends up with, after testing loads, is basically ED's, with a small amount of sugar added: www.theguardian.com/lifeandstyle/wordofmouth/2010/jul/22/how-to-make-chocolate-mousse

I like this one, except it goes very solid, for me anyway. You can cut it with a knife, but as a dessert (rather than a mousse), it's very nice.

If you want one without the raw eggs, nigella has a pretty good one. Just make sure the chocolate mixture is cool before folding in the cream.

50gms of dark chocolate per person. Melt and cool slightly.

Separate one egg per person. Whisk whites until stiff(ish). Beat yolks into chocolate along with a dollop of condensed milk and a good glug of the booze of your choice (rum for me but anything will do).

Loosen up the chocolate by adding a tablespoon of the egg white mix and stirring then add the chocolate mix to the egg whites and cut in until well mixed. Chill for a few hours. Lick every bowl and utensil until you feel sick Grin

😂😂😂 @Sarahlou63 that sounds delicious. As do they all - might work my way through, thank you!

Many moons ago I had a recipe that used evaporated milk and gelatine- it was utterly lush and I'd love to make it again

Darkchocolateandcoffee · 09/10/2021 11:02

God @balzamico anything with that stuff in is like catnip to me. How delicious.

@Mamamamasaurus I've topped the individual mousses wiht whipped cream and crushed Crunchie bar and they look bloody great - having tonight, thank you! (I poured the last little bits into a bowl and we ate it yesterday and it was incredible).

Per serving:

1 egg
25g dark chocolate
1 tsp brandy

Melt the chocolate and set aside to cool. Separate the eggs and whick the whites to stiff peaks.

Stir the egg yolks and brandy into the chocolate, then add a dollop of the whites and stir in to loosen the mixture. Carefully fold in the rest of the whites, then pour into serving dishes.

LadyMonicaBaddingham · 09/10/2021 11:20

WHISK the whites 🤦🏻‍♀️
