Buffet help please

Hi, I need to do a buffet/party food soon and there are some vegetarians (obviously not all food needs to be vegetarian), one nut allergy (so need to completely avoid nuts) and some lactose intolerant (again I think I can have some food with lactose but need some avoiding it). I'm going round in circles trying to work out what to do, does anyone have any suggestions. Thanks

Are there any lactose free vegetarians? if not then that's abit easier as you have 3 requirements. It gets more complicated if you have cross over between the restrictions!

So like vegetable pakora could be DF and veggie, and chicken pakora could be DF. I'm using dairy free as lactose free just because its a bit easier.

But try and do as much DF as possible, just because its easier, so use DF spread in sandwiches as its of little consequence to non-DF people. Avoid brioche rolls/bread and check crisps too. If in doubt keep packaging handy for people to check.

How about some big vats of chilli with toppings so everyone can pick and choose to suit themselves. Do one beef chilli, one veggie chilli then guac, sour cream, cheese, spring onions, crispy onions, corn bread,, tortilla chips, green salad etc etc. just label the dishes so everyone knows what is in what

Quiche- make sure this is veggie

No lactose free vegetarians to the best of my knowledge. Thanks for the ideas everyone. I'm thinking now of something like @SeaToSki suggested - 2 vats of chilli/curry/something similar, one meat, one veggie and then sides.

That way I can cover everyone and limit the number of foods that exclude some people. I can easily make the side dishes fit all the requirements
