Please share your tried and tested daal recipes! I’m looking to do some batch cooking and thought this would be a good place to start.

Coconut dhal (serves 2 generously): Cook 200g red lentils in 400ml chicken or veg stock. Meanwhile fry a largeish sliced onion on a medium to high heat until darkish brown but not burnt. Turn heat to low and add a chopped chilli, some grated ginger and 2 crushed/chopped cloves garlic. Fry gently for a few mins and stir in 2 -3 tsp curry powder. Stir into cooked lentils and add a small carton of coconut cream. Heat through, season if needs salt and serve. Optional: stir in some spinach towards end. Add chopped coriander leaves.

Man, I love daal!

If you are looking for a red/yellow daal try the one from Nisha Parmar (the masterchef contestant from a few years back) - it is on her videos on Instagram. She does a batch of coconut daal (mixed red and yellow lentils) which she tops with different toppings each day for lunch (eg roasted veggies). It so a nice recipe, even without the toppings, and freezes well.

The dishoom black daal is also very good, but note that black daal takes longer to make because you need to soak it in advance or cook it for longer.

If you want to try something a bit different gujurati daal is nice and has peanuts in it for a different texture. www.sanjanafeasts.co.uk/2021/04/gujarati-wedding-dal/

All the recipes on sanjana feasts are very foolproof and work well. Her videos on Instagram and YouTube are also great. Lots of very good tips. Can’t praise her enough - she is fantastic
