I've recently been diagnosed as low in folic acid (among other things). I've heard that spinach is a good source of this, which is handy as I've got a big bag of frozen spinach that I bought before in a fit of "I'm going to eat healthier" and then never used because I don't actually know what to do with it. Can I just stir a couple of frozen balls into say bolognese? Or curry? Can I mix it into some mash?
Or are there any amazing recipes I should be making? (I'm also low carb)

Mushroom, chickpea spinach curry is really lovely and also super cheap and healthy:

You can also add to things like scrambled eggs, omelettes, bolognese, lasagna, curries and chillies. I also have it raw in sandwiches and wraps instead of lettuce.

Spinach pancakes for breakfast. Put a couple of good handfuls of spinach in a blender with 100g flour, half a teaspoon of salt and a teaspoon of baking powder. Blend and loosen up with water.

Cook in a frying pan then have a fried or poached egg on top with a spoonful of yogurt and a bit of chilli.

I'm low carb too & go through a couple of packs a week if baby spinach.

I chuck handfuls in a hot pan with a bit of butter & put in on top of/on the side of any dish.

Throw it in at the end if steaming vegetables

Eat raw with salad

Veggie bacon, avocado, butter wilted spinach with ground pepper --food of the gods!!

I used to use frozen spinach but since being low carb don't really eat the meals where I'd use it that way. But if I had some & wanted to use it up I'd probably defrost it squeeze as much water out as possible & add to a cheese or mushroom sauce

Spinach is FAB!

Green soup!
Bag of spinach, bag of frozen peas, plenty of fresh mint, salt pepper and stock. Add any other green veg you've got. Onion if you like.
Delicious! Even my green veg-hating DD loves it.

Broccoli is also a really good source of folate - I always save the chunky stalks and add them to soups - so if you have some broccoli stalks add them to HappyBus's green soup for extra folate. Broccoli stalk and frozen pea soup is great too.

Green soup sounds delicious! I make pea soup quite often anyway. And the stalks are the best bit of the broccoli Grin

I think I've been so lazy with cooking (and totally exhausted due to health issues) that I don't cook as much as I should from scratch. Which is stupid because I can cook!

I got this brilliant tip from another MNetter:-
If a have half or a third of a bag of fresh spinach left over & I know it's not going to get used up in a day or two then I just put it in the freezer. Just leave it in the bag & seal it with a clip & then chuck in the freezer.
I use it straight from the freezer in curries & pasta sauces.

I often Chuck a few chunks into a curry or stew. I also really like it with mushrooms in a garlic cheese & cream sauce. Goes really well with pasta/gnocchi or on toast. (Or just on it’s own for low carb!)
