I've got so few ingredients in at the moment but have king prawns and red peppers, lots of spices, tinned tomatoes, small tin of coconut milk, onion, garlic, ginger etc. I can't find a basic recipe that doesn't ask for paste from a jar. Does anyone have a nice, basic, recipe they can share? Thanks :)

I use a Madhur Jaffrey one - better wish fresh coriander, but you could manage without, I think....

There's a Jamie Oliver one for quick prawn curry that only takes 20 mins. It uses yogurt but you could use your coconut milk instead. It's on a couple of sites.

[/quote] That sounds good - and quick. I can substitute the courgette with pepper. I have got fresh coriander too! Thanks Jennie!

Fresh dill is very good with prawns gives such a nice aroma and also some lemon juice you can add for a varied flavour..

I love this quick and easy recipe and you could adapt a little with your coconut milk.
