Help me impress my foodie neighbours with canapés

Our incredibly foodie neighbours are coming over for drinks and nibbles at the weekend.

N1 is a huge foodie and he cooks the most incredible feasts whenever we go over. His partner, N2 is lovely but - erm - not shy about putting his opinions forward!

I have offered to do nibbles and am a decent cook but I've got no inspiration. I have most kitchen kit (but no deep fat fryer) and I'll be putting the kids to bed in the hour before they arrive so it needs to be easy to reheat or pull out of the fridge!

Wow me with your canapés!

Smoked mackerel pate is easy and delicious and is my standard canapé.

Whizz up the smoked mackerel in the magimix with creme fraiche, lemon juice and lots of black pepper. You can also add a dollop of horseradish but it's not essential.

If a Spanish tortilla is to be the star I lovingly make it from scratch. If part of a buffet I buy a ready made microwavable one. Just cook, let come to room temp, cut into squares. A cocktail kebab of cherry tomato, basil, mozzarella and an olive is a thing of beauty too!

Honey mustard cocktail sausages or mini chorizo cooked in cider. I always get comments about how amazing it is that a vegetarian can cook such delicious canapés when you can't taste them. The truth is it's just good sausages with 2 or 3 ingredients added.

I wouldn't do dips in the time if covid. I' e always thought they are grossly unhygienic, unless they spoon them onto a plate.

I think you have lots of other amazing suggestions here! I'm hungry now!
