Best recipe for vegetable casserole/stew for batch cooking and freezing

What the title says really! I’ve tried lots of recipes of my own over the years (some more successful than others, but all a bit meh), so looking for your tried, tested and tastiest recipes for a vegetable casserole/stew, preferably one which you’ve frozen and defrosted and still tastes great/doesn’t turn to mush). Open to all types of veg/herbs/spices, no dietary restrictions (so doesn’t need to be gluten free/vegan etc.) - just want something without meat/fish/poultry.

If it helps, I do have a slow cooker!

A lot of veg go soggy in the freezer so best to avoid things like peppers and corgette. Id go for something like a lentil and bean chilli, with maybe carrot, onion, tomato.
Dahl freezes ok. Curries/ tagines work if you include something like chickpeas or butterbeans.

I don’t mind too much if peppers/courgette go soggy, I’d expect that tbh, and you do get the flavour! It’s when the root veg etc breaks down that it’s not so good. Love all of your suggestions, are there any recipes you use (or could point me towards) that you’ve found work? Some people seem to be able to ‘throw it all in’ and it comes out great and tastes amazing. My efforts seem to be overcooked and/or bland/mind-blowingly hot/salty. Basically, with the wrong proportion of veg types/herbs/spices/stock etc.
