Turkey Tacos - the quickest meal ever!

This takes me minutes to make, we all love it. I just wanted to share it in case any one else was looking for an easy meal that can be made in 15 mins.

Large turkey mince
Tin or 2 of drained kidney beans
Knorr chicken stock pot
Chipotle paste (1/2 a small jar)
A packet of old El Paso fajita seasoning - smoky bbq
A sprinkle of paprika, cumin and cayenne pepper
Oregano
Pepper - sprinkling
Packet of cooked rice
Tacos - Tesco own brand tacos are really good

Fry turkey, when it’s done add stock and kidney beans, fajitas powder, herbs spices and a couple of teaspoons of chipotle paste. When it’s cooked down a bit more add a packet of ready cooked rice (we use Aldi wild rice). When liquid is gone, serve with dips (failing that yoghurt with chipotle paste mixed in and sirracha on top), Lettuce, cheese.

If you're using a packet mix why are you adding extra spices?

Because even though I have all the spices and use them Regularly, I've never managed to recreate the majesty of an old El Paso mix. Also, I just came up with the recipe one day when my kids were hungry. I had half a pack of the OEP mix in the cupboard and threw it in. I also cooked the turkey from frozen which made it even quicker.

It's a game changer! I got a great recipe from a recipe box for sticky beef, that I will post. The recipe box itself was a disappointment (just not enough food for my lot) but it was worth it to get that recipe. So quick! I'm someone who spends hours in the kitchen cooking most days, so I love that even my husband is enjoying these quick meals (because they are protein heavy and that's a prerequisite for him) as well.

One of our quick and easy meals everyone enjoys is sausage pasta. Pack of food quality chipolatas, fry them slice into small chunks. Meanwhile boil some pasta then add cooked sausages to the pasta and some stir in pasta sauce or pesto, we like a tomato and ricotta one, plus a tin of sweetcorn, mix altogether and put into bowls and add grated cheese on top. Always goes down well here!

Another one of mine is to cut up a packet of pizza pepperoni and simmer in couple of tins of chopped plum tomatoes. Makes a good sauce for pizza and pasta (DH likes it with meatballs and mozzarella on top and grilled).

One of my quick go tos is ginger pork

Half pack of pork mince
2 large carrots
tin sweet corn
2- 3 garlic cloves
thumb size piece of ginger (I keep mine in the freezer as easier to grate)
Soy sauce
Packet of microwave rice.

Fry pork to brown with finely chopped garlic cloves. Grate carrots and ginger and add to pan. Cook for 10 minutes or so, add drained sweetcorn a good slug of soy sauce and the sachet of rice and simmer for 4 minutes or so until the soy has all been absorbed.

I usually use the rest of the pork mince to make a bolognese style ragu with yet more grated carrot to use in a pasta bake later in the week when I have a bit more time to cook.

Always meant to try turkey tacos so may well do!

Crispy ones, but we've had it in a wrap as a burrito before now.

Sticky beef satay wraps

2x Limes
50g sweet chilli sauce or chilli jam
50g honey
30ml soy sauce
500g mince
15g garlic paste
15g of ginger paste
A cucumber
A few carrots
30ml Chinese rice wine
Tsp of chilli flakes (use less if kids aren’t keen)
55g of smooth peanut butter
Couple of packs of small tortillas

Get everything measured and ready before you start otherwise it’s a bit of a faff.

Fry the beef.
Ribbon the carrots with a speed peeler. Baton the cucumber
When the mince has started to brown add the ginger, garlic, honey, rice wine, half of the soy sauce, and some chilli flakes.
If you like a stronger flavour add more of the above.

Satay sauce - Roll the limes and squeeze the juice, combine the juice with the peanut butter, chilli sauce/jam, remaining soy sauce, pinch of salt and a splash of water.

Serve on small tortillas

This is a really quick meal and I make it with frozen fish,chilli flakes and frozen coriander so it becomes a store cupboard meal
