Mascarpone! I have mascarpone, ricotta and Greek yoghurt in the fridge. No time to get to shop. Making a v basic chocolate sandwich cake but have had to whip up emergency icing and now I need an emergency filling! Thanks!

Based on this recipe, which I used to make quite often, the mixture tastes good. You wouldn’t need quite so much for a sandwich cake of course.

Mascarpone and icing sugar is lovely. Just don’t whip up the marscapone much - it separates quite easily.
350 g of marscapone to 130 g icing sugar ( from the raspberry ripple baked in recipe )

Agree just add some sugar, or with jam if you have it, bit of vanilla essence maybe.
Maybe even cocoa powder and sugar with it.

If you just have the soft cheese and no sugar or anything sweet than yeah think you’re a bit stuffed.

Think Black Forest cake, chocolate sponge and cherry jam. Chocolate and raspberry, and chocolate and apricot. All very common chocolate combinations.

Most fruit jams will work well with chocolate. Apricot, raspberry or cherry will work particular well.

You're right, I be just mixed black currant jam into mascarpone and it is scarily delicious
