Meal Planning Groundhog Day!

Every week, I do a meal plan, order the food and my husband cooks it. But I feel like I'm doing the same dishes on rotation so need some inspiration! We're pescatarians but try not to eat too much fish and are also both trying to eat healthy.

This weeks plan is/was:

Monday - pasta with premade sauce (food delivers after dinner!)
Tuesday - cod, h/m wedges with samphire
Wednesday - broccoli & "beef" stir fry
Thursday - "chicken" Kiev's with salad
Friday - "sausage", egg & h/m chips
Saturday - lasagne
Sunday - roast

Other favourites are; prawn linguine, Cajun bake, salmon & broccoli pasta and wraps of some kind

What else can I put on there please??

Gnocchi with roast cherry tomato sauce (bog easy, loads of recipes, basically I just put chopped onion and garlic in a baking tray, halved cherry tomatoes in a single layer, well coated with oil and roast. It dies take an hour to roast though)

Egg fried rice

Huevos rancheros - I did them with feta and avocado chopped into the sauce just before putting the pan under the grill, and served with noodles or toasted pitta.

I like the Gousto recipes for this. We had a few boxes on a deal when a friend gave us her referral code and it's definitely added more variety for us.

Lots of vegetarian & fish recipes ion their site.

Coconut curry with quorn pieces and veg (peppers, courgettes...), served with rice
Mac and cheese (add butternut purée to the cheese sauce so it's a bit lighter, creamier and sweeter)
Tomato and veg pasta bake
Quorn "chicken" crispy fillets with roasted potatoes and peas
Frittata
Tomato and cheddar tart with a side salad
Goat's cheese and spinach quiche
Pho soup
Shakshuka with crusty bread
Minestrone
Pad thai with crispy tofu (I press the water out, cube it and fry it in veg oil until golden, then add a splash of soy sauce, turn off the heat and let it finish frying on residual heat)
Mezze spread: falafels, hummus, toasted pitta bread, tzatziki, crudités, olives...
Spaghetti with fresh tomato, garlic, basil, mozzarella and olive oil
Veggie sausages and mash
Potato salad with hard-boiled eggs and celery
Bruschetta
Sushi rice with tuna, soy sauce and ginger

Chilli seems an obvious gap. We have it most weeks.

I recommend bbc good food’s burnt aubergine one often-it’s really popular on here. Do double the recipe and freeze in portions. That could be a good alternative for your late shopping day.
Jamie Oliver’s sweet potato chilli is great, as is bosh’a ultimate chilli. Leon’s Brazilian black bean stew is really good (I’d double all the spices though) and also freezes well.

Have you tried a food box delivery? My DH does all the cooking and was getting bored with his repertoire but also was finding it stressful thinking of meals and getting ingredients. We trialled a food box and it's changed our life. New ideas. New tastes. New recipes for the repertoire but best of all all ingredient delivered to door, great produce, the instructions right there and every dish has been great.
We do it for four nights. Amazing. Never looked back.
He use My food Bag (nz only I think), Woop and Hello Fresh. All great.

Are all the " " items fake meat etc? If so quite a lot processed?

I'm a big fan of traybakes - last night did broccoli, onion, garlic, tomato, butternut squash with a block of feta, and chickpeas for the last 10 mins to get crunchy.

Just wanted to add one of our all time favourite fish dishes, it's 10 harissa salmon.

Everyone in the family loves it and it's very fresh and tasty.
