Well pretty much the same as meat-eaters plan I would say, a combination of factors: what we like/what days we are busy/at home/individual preferences of family members/what needs using up from the fridge or cupboards really. In my case it's complicated by the fact I am veggie but DH is an occasional meat-eater so we sometimes have fully veggie meals and sometimes DH will have a meaty version or some meat on the side. We tend to eat fairly typical easy family dinners in the week, stews, chillis, pasta, stir fry, curries, that kind of thing, all fairly easily adapted for veggies. This week's menu which is pretty typical for us:
Monday: Stir-fry with tofu, noodles, black bean chilli sauce (as it happens DH just had the tofu but sometimes he would throw some meat in, chicken usually)
Tuesday: Three-bean chilli with rice and sour cream (we have beef chilli in the freezer so DH could have a meat version if he wanted, again he had the beany one in the end)
Wednesday: Veggie Burgers with potato wedges (beef burgers in freezer if desired)
Thursday: Puy lentil and aubergine stew, poss with rice, poss with wedges or mash (depends on if we have leftover potatos from tonight)
Friday: Pizza night (variety of veggie/non veggie toppings available), salad, wedges, coleslaw
Saturday: People over for BBQ - variety of meats, halloumi skewers and mushroom burgers for veggies (just realised we're having burgers twice in a week, oops!). All the usual sides.
Sunday: Over at in-laws for roast dinner, there will be some kind of tart or nut loaf for me plus all the trimmings...
