Pan toasted almonds with small amount of olive oil, smoked paprika, sea salt and a touch of chilli
Serve with roasted cod topped with red pesto topped for the last five minutes with chorizo.

Really nice with a green salad on the side and a good brown bread

Trout and Almonds was a British 70s / 80s classic!

Plus loads of Mediterranean / North African dishes involving chicken etc - various savoury pastes made to be eaten with fish / meat / vegetables. Will try and get back tomorrow.

They go brilliantly in stir fry. Fairly well in curries (not as good as cashews though)

I put them in a kind of pilaf and with saffron and raisins. Pre toasted. They tend in the cooking in the rice to break in two quite often.

Roast cauliflower with almonds and spelt (a Hugh F-W recipe that we use a lot).

Pan fried in ghee or butter along with cashews then cooked with basmati

I also do oven roasted almonds in lemon and saffron (soak in lemon juice and saffron for an hour or more, then drain (keep the lemon and saffron liquid to use again!), toast in the oven for 5-10 minutes then remove and toss with olive oil and a pinch of salt and toast again until golden. These are great as nibbles to have with drinks, or a snack during the day. They also go well with buttery rice or cous cous and bitter (or not) greens.

I do a vegetable tagine recipe that uses whole almonds, I think it's from a Leon cookbook.

I have a recipe for an Afghani wedding pilaf made with chicken, whole almonds and orange sugar syrup.

It's pretty gorgeous, but takes ages to make.
